Five Quick and Easy Marinades for Chicken (or Tofu)


One of the quickest meals to make is baked chicken with a side of rice and stir-fried veggies.

Marinating the chicken in different ways can help keep this meal interesting. The leftover chicken also makes a flavorful addition to a salad.

The five marinades listed below can easily be made in a matter of minutes and, perhaps with the exception of the lime, are made with ingredients I always have on hand.

For maximum flavor chicken should be marinated for two hours or longer, preferably overnight. But, if you’re flying by the seat of your pants and cooking at the last minute (and I confess I do this a lot) then twenty minutes at room temperature is sufficient.

However, the Teriyaki and Honey Garlic recipes do benefit from longer marinating time. If you just do twenty minutes, the chicken will taste great that night but leftovers will only have a hint of flavor.

The recipes listed below are enough for 2 – 3 divided chicken breasts. They would also make great marinades for tofu or portobello mushrooms.

Honey Mustard
1/4 c liquid honey
1/4 c Dijon mustard

Chili Lime
1 tbsp chili powder
1/8 tsp cayenne pepper
Zest from 1 lime
2 tbsp lime juice (~1 lime)
1 tbsp extra light olive oil

1/4 c reduced sodium soy sauce
2 tbsp extra light olive oil
1 tbsp liquid honey
1 tsp garlic powder
1 tsp ginger powder

Red Wine & Thyme
1/4 c red wine
2 tbsp extra light olive oil
2 tbsp Worcestershire sauce
1 tsp garlic powder
1/2 tsp thyme
dash of cayenne pepper

Honey Garlic
4 tbsp liquid honey
2 tbsp extra light olive oil
2 tbsp lemon juice
1 tsp garlic powder
1/4 tsp dried oregano
