I have been absolutely in love with pomegranates this season. I’ve always liked them but in the past they were a rare treat because they took so long to get into. However, I recently discovered this awesome technique to seed a pomegranate quickly and it has changed everything. I’ve been indulging in 2 – 3 pomegranates a week this season and it’s been fabulous!
In addition to eating the seeds raw and in yogurt I’ve been using them in recipes as well. I came up with this winter salad just before Christmas and it looks beautiful on the table. The pomegranate seeds glisten like jewels and remind me of winter berries and the feta makes me think of freshly fallen snow.
This salad makes an excellent accompaniment to Christmas or New Year’s dinner.
Pomegranate, Feta and Pecan Winter Salad Recipe
- Mixed Greens
- Pomegranate Seeds
- Pecans (Halves or Pieces)
- Goat Feta
Sweet Balsamic Vinaigrette ~
For every 2 – 3 cups of salad mix together:
- 2 Tbsp Extra Virgin Olive Oil
- 2 Tsp Balsamic Vinegar
- 1 1/2 Tsp Liquid Honey
Arrange your washed mixed greens on plates or in bowls. Sprinkle with pecans and crumble the feta on top. Add the pomegranate seeds last so they don’t get covered up by the other ingredients. You want to show them off. Drizzle with the sweet balsamic vinaigrette and enjoy!
